Zucchini Recipe


Perhaps a friend, family member, or neighbor is a keen gardener and has given you more zucchini than you know what to do with, or maybe it is on sale at the grocery store. If you enjoy the taste of this healthy and flavorful vegetable, you might be interested to learn how to make zucchini soup.

One of the most basic methods(chefs étoilés) to make zucchini soup is to simmer some chopped or sliced zucchini in water or broth, adding herbs, spices and seasonings. Stir in a little cream or milk if you like, then puree the soup in a food processor or blender and enjoy. Of course, you might like to add meat, fish, or poultry to your zucchini soup or add noodles, potatoes, or rice to make it more of a meal and more satisfying.

There are other recipes for soup where the zucchini is combined with other vegetables, such as carrots, potato, onion, leek, rutabaga, squash, pumpkin and more to make a mixed vegetable soup. You can be creative with these and throw in any vegetables, which are past their prime, because they are ideal for making soup.

There are also lots of things you can do with zucchini if you have some left over after making soup. You can use it in stews and stir fries and it is also tasty serve raw in salads. Recipe for Zucchini


Farfales in gambas and zucchinis

Ingredients: 
450 g farfalle
4 gambas
2 zucchinis
4 flowers of zucchinis
1 tomato
1 onion
100 g sauce of tomato
oil of extra virgin olive
salt, pepper


Method:

Cut zucchinis, flowers of zucchini, a tomato, salt, oil of extra virgin olive, a little sauce of tomato in small pieces. Hack an onion. In a frying pan, put some oil and the hacked onion. Cooked zucchinis during 1 - 2 minutes. Add the flowers of zucchini, the hacked tomato, the gambas, a little juices of tomato and some pepper. Cook even one minute. Boiled by some water, to cook "Farfalle" with a little salt there. If they are cool, count 2 - 3 minutes, otherwise, a little longer. Drain pasta, blend them in other ingredients, in the frying pan, and dispose this nice group in the plate.

Eating Celery For Improved Health


Celery is often mistaken for a vegetable but it is actually an herb that is native to the warm Middle Eastern and Mediterranean regions of the world. The celery we know and easily recognize today with their large, upright stalks was not developed until the late 1700s and modern science continues to make improvements on the herb as now there are even string-free varieties available to choose from.

Celery is rather high in fiber and offers an impressive amount of vitamins C and K and its beneficial fruits or tiny seeds are often used for flavoring foods as well. Fresh and crisp celery offers a distinctive crunch for salads and when it is cooked it provides great flavor for soups, stews, and sauces.



Celery is also a primary component of stuffing and can be used in so many different dishes including cream of celery soup, chicken, egg, and tuna salads, rice dishes, and also casseroles. Raw celery is even good for serving as an appetizer along with cream cheese, peanut butter, or vegetable dip.

When buying celery, look for stalks without any wilted or brown leaves on top and the individual stalks should be firm and unblemished. Although celery is available all year long it tends to taste best when it is harvested during the fall and winter months in warmer climates.

To prepare celery, simply rinse each stalk thoroughly to remove any mud and dirt and then remove the white bottoms and leafy tops before cutting or chopping.

Celery will keep fresh in the refrigerator for up to two weeks when stored loosely in a plastic bag. Submerging in cold water for a minute or two will help to restore some of its original crispiness if the stalks have just started to soften as celery is mostly made of water. Once the leaves of the celery stalk appear wilted that is a good indication the celery itself is not fresh.

Pan- Fried Cod

I'm not sure how many cooking techniques are there for cod, but for cod lovers like the Portuguese, it may run into the hundreds. Cod in England is most frequently served cooked in batter, having been deep fried. It can also come steamed and served with a parsley or vegetable sauce. In India cod is used in certain dishes, but usually first dried and salted.

Cod is versatile. It's white and mild-flavored flesh can be a wonderful substitute for meat protein making it easily adaptable to all methods of cooking. Aside from being an excellent low-calorie source of protein, cod contains a variety of very important nutrients. Imagine how a 4-ounce serving of cod can provide more than 50% of the daily need for protein for only 119 calories.


Pan frying is the simplest way to cook cod. Simply preheat a large, non-stick pan over medium high heat for 1 minute. Add a tablespoon of cooking oil to the pan and heat for another minute, or instead of adding the oil to the pan, brush it onto the cod itself. Make sure all the sides of the cod fillets are dry and well-seasoned with a little salt and pepper. Put the cod in the pan and cook for 4-5 minutes, or until the edges start to turn slightly brown. Turn the fish over and cook for another 3-4 minutes.

Deglazing the pan with a little wine and butter renders a simple but wonderful sauce to top on your cod fillet. If you're adding parsley on your sauce, preserve its bright green color by immediately pouring the sauce on your cod fillet then serve right away.

Crayfish Recipe


seafood platter is often a real treat for people when ordered at a restaurant so you can imagine your friends' delight if you decide to serve them this meal at your next dinner party together.
The first thing I'd suggest when considering this idea is to make sure you have checked that your guests actually like seafood first. You don't have to ask them directly if you'd like to surprise them with a seafood platter - you could simply ask if there is any food that they don't like or can't tolerate (remember, a lot of people are allergic to seafood). Prawns with the flavor of a barbecue taste delicious and char-grilled baby octopus is always popular but you must remember not to overcook these as they will become chewy and rubbery.
Marinades are great and very popular for seafood but if you don't have time for this, the seafood cooked in their own juices are tasty too. Marinades are liquid bases that you season to marinate food in before cooking and this method allows foods to absorb the flavors - and makes the food tenderer.

The platter could consist of anything from oysters, prawns (shrimps), crabs and lobster (or crayfish) for a cold platter or you can add some hot seafood like fish fillets, calamari rings, scallops and baby octopus. Try to buy all of your seafood on the day on which it is to be served. If you are serving a combined platter, make sure you keep the cold seafood in the fridge until just before serving so nothing goes off.

Crayfishes grilled in the steam of primulas

Ingredients:

20 crayfishes
20 cl of vegetable broth
20 cl of whey
 roots of wild primulas
flowers of primulas
40 g of butter
6 c. in soup of skim milk
salt, pepper

Method:

Castrate crayfishes by withdrawing the black bowels with a pointed knife. Reserve four there. Shell the others by separating the head of the tail, while leaving the last two rings and the caudal fins. Made reduce vegetable broth by half, add 20 heads of puréed crayfishes and the whey. Made still reduce by half, add the roots of primulas, withdraw some fire and cover. Let brew 3 or 4 minutes. Mix and pass to Chinese. Rectify flavouring, incorporate the butter and the milk, then mix to emulsify well. You must acquire 8 tablespoonfuls of sauce. Add a top of sugar if you think it is too sour.

Eating Fruits


Fruits are some of the most beautiful creations of God and given to us for food. Humans have gathered wild fruits for food since the time of Adam and Eve. Star fruits are a cooling to warming nature, sweet and slightly astringent. Green and sour fruits are more cooling in nature while the yellow and sweet ones are more warming. Gratin of cool fruits in the sillabub of Sambucca


5 cl of Sambucca which is an Italian alcohol, that can be replaced by Grand Marnier, by Cointreau, by Amaretto, by all alcohols which they use in pastry

Preparing Beef


Be sure to look for beef that is quite lean when you are shopping for foods that will help you burn fat. These are called round or loin(bruno lorgues). Be sure to buy beef that is certified organic and that has been grass fed. If you buy ground beef, be sure it is at least ninety percent lean.


You can refrigerate beef as soon as you get it home, or you can freeze it and use it at a later date. Be sure to use beef that has been refrigerated within 5 days. If you are going to freeze it, you can repackage it or you can freeze it in the package it comes in. If you keep it in the freezer, your beef will be fresh for up to a year. When you defrost, be sure to do so safely in cold water or in the fridge.

Before you cook it, cut off all the fat that you can see. It is not necessary to rinse beef before you cook it because the cooking will destroy bacteria that may be present. You can marinate beef in your refrigerator for as many as 5 days.

If the marinade has been used before, be sure to boil it before using it again, and then toss it out when you are finished with it.

Do not cook beef partially, refrigerate, and then finish cooking at a later time. Cooking it partially will not kill any bacteria that may be present.

For tougher cuts such as, tri-tip steak, round steak, eye of round steak, chuck, chuck arm, blade steak and round steak, braising is a good cooking method. It is good for these kinds of beef roasts as well: back ribs, short ribs, rump, shoulder, blade, and arm. To braise, you would use a tightly covered pan with a small amount of liquid and a low flame.

Other ways to cook it are pan broiled, broiled, stewed, roasted, and grilled. Broiling, grilling and roasting are low fat cooking methods. Frying is the worst choice you can make.

There is almost no limit to the dishes you can make with beef.

Different Ways in Cooking Eggplant


As a vegetable, eggplant does not necessarily have the best reputation. But this is not due to the eggplant itself, this is because of the way it is frequently prepared. Breaded and fried, then layered with greasy cheese, eggplant suddenly becomes a caloric nightmare. Eggplant itself is not high in calories, however. It is actually made up of 92% water and therefore contains only about 14 calories per half cup on its own. It is also a good source of fiber, calcium, and potassium. So eggplant is a great choice to include on your dinner plate, and there are many healthy and deliciousways to prepare it.

First, before preparing your eggplant dish(chez bruno lorgues), take care to select your desired type of eggplant. At your local grocery store or farmers' market, you may find Japanese White Eggs, which are small and white; Thai eggplants, which are a small green variety of Kermit eggplant; and Black Beauty eggplants, which are the large, glossy and dark purple variety that we most commonly see today. As with all vegetables, I highly recommend growing your own, since this is the best way to insure that they are healthy, fresh, and free of chemical pesticides and herbicides. The variety that I have grown successfully and enjoy most is an Italian heirloom variety called the Rosa Bianca eggplant. Whereas Black Beauty eggplants sometimes tend to have bitter flesh, the Rosa Bianca has a mild flavor that is not bitter, and a very nice meaty flesh. It works well as a meat substitute in vegetarian dishes, and is excellent in the following recipes.
Eggplant Parmesan

In traditional eggplant parmesan, the eggplant is fried, which fills it with grease and negates its traditional value. Instead of frying the eggplant, try broiling it. Cut the eggplant into ½ inch slices, coat them with breadcrumbs, spray the slices with cooking spray, then broil them in the oven for 5minutes on each side. Serve the eggplant slices with marinara sauce and a slice of low-fat mozzarella cheese on top.

Grilled Eggplant

Eggplant makes a great addition to shish kebabs when cut into chunks. You can also place ½ inch slices directly on the grill rack. Brush on a little bit of olive oil to keep them from sticking, season them with salt and pepper, and grill them over direct heat until they are tender. It should only take about 3 minutes or so per side. These eggplant slices are excellent on top of couscous, or on a sandwich with Focaccia bread, goat cheese, and some fresh tomato and spinach.

Charlotte of sea bream in eggplants


Ingredients: 

4 mackerels
1 onion
1 carrot
20 g of butter
25 cl of white wine
50 cl of water
20 cl of vinegar of hard cider

Method:

Begin by raising the nets of mackerels of the 2 sides. Ebarbez lightly sides. Now, make swimming, that is to say the bouillon which is going to serve for poaching mackerels. Pick onions, then carrots (with a canneleur), give them a small decor. Put a little butter to be melted, incorporate onions and carrots, add a little salt. At the end of 2 - 3 minutes, incorporate the white wine, cook some minutes, then incorporate water (a half a litre) and cook during 10-15 minutes. During this time, put the mackerel in a spread with butter dish of baking. If mackerels are a bit big, cut again them in 2, before putting them in the dish. Dispose it in the dish, separated well, salt it and add pepper. Clean off. Pour very hot swimming over, by hitting in a light boiling, pour the vinegar of hard cider, over for made brew. Leave another 2 - 3 minutes of baking. Decorate with the dill. It is a dish which must be served lukewarm.
