Chocolate fudge is a delicacy made with butter, cocoa powder, milk, and brown sugar. Fudge can be either layered or filled with nuts, raisins, mints, candy or just about anything you can think of. It can be made into solid squares or creamy squares. Which ever form you like it in, fudge can be made or bought in that way. There are even fudge squares that are not made of chocolate known as vanilla fudge. But, when we hear the word "fudge" we think immediately of the soft chocolate squares so many of us know and love

Ingredients:1 can (14 ounces) sweetened condensed milk1 tablespoon salted butter1/2 teaspoon salt18 oz chocolate (buy the best chocolate you can find - it should be a pure chocolate * see note below)1 teaspoon pure vanilla

Preparation:2 In a separate container, pre-melt the chocolate in the microwave until completely melted and stirred - no lumps. Be careful not to overheat the chocolate in a microwave - use 30 second intervals, stirring at each break. When the sweetened condensed milk is warm and relaxed, pour all the chocolate in the saucepan with the milk.3 Stir with a wooden spoon. The mixture will be thick as chocolate contains and then he will shine. When your mixture becomes shiny, add the vanilla and mix quickly. Remove from heat and immediately pour into prepared pan.4 Allow to cool for s veral hours in the refrigerator before cutting into small squares. The fudge is best kept in an airtight container and eat within 4-5 days. This recipe can be doubled and put into a 9x13 inch dish.5A note on chocolate: Buy a high quality chocolate expensive retailer like Whole Foods or Trader Joe's. Chocolate chips or chocolate fondue sold are not good choices because they are stabilizers and a firmer fudge.
