There is a particular period of time during a crab's growth cycle that it loses its shell in order to grow. Any crab that is caught during that time period is considered a Soft Shell crab.
Do you know what picked crab meat is? It means that the meat is, literally, hand picked by human hands. This is generally considered the best type of crab meat as it will have fewer shells and shell fragments inside of it (if any). Processed crab meat, which is removed from the shell by a machine, often contains shell fragments inside the meat. How much time do you have on your hands? Picked crab meat, although more expensive, is much quicker to prepare since you don't have to worry about shell fragments.
One use for crab salad is to spread it on top of Avocado halves. This combination makes for a tasty meal that's quick to make and will fill you up. However, it's not light on the wallet!
In a large bowl, mix together the following ingredients: 1/2 cup of mayonnaise (home made preferred), 1/4 cup finely chopped cilantro, 1/2 teaspoon sea salt, 1/4 cup finely chopped onion, and 4 tablespoons of lime juice. Now add 12 ounces of fresh (cooked) crab meat (hopefully you picked out a flavor that suits your taste buds!). Now mix it all together.
Cut four jumbo avocados in half. Remove their skin and the seeds. If you don't plan on eating this dish immediately, squeeze several drops of fresh lemon juice onto the avocado halves. The lemon juice will prevent them from turning brown.
Place your avocado halves onto serving plates, and then plop a healthy serving of the fresh crab salad onto each slice. The final step in this process is a simple one: eat!
