Chaudrée de champignons
- Adapted from Mushroom Cookery by Rosetta Reitz is a consistent version ofmushroom soup.Feel free to add clams, fish and oysters, too.
- Ingredients:Mushrooms 1 lb4 slices of bacon1 onion, chopped2 cups potatoes, diced2 cups water½ teaspoon of salt1/8 teaspoon freshly ground pepper2 cups milk2 tablespoons butter1 to 2 cups light creamMethod:1 Cut the bacon into strips ¼ inch. Cook in a frying pan and drain on absorbent paper. In the same skillet, saute onion until golden. Pour off half the fat.2 In the pan, add the potatoes, water, salt and pepper. Cover and boil for 30 minutes. Cut the mushrooms into quarters. Add to potato mixture with the milk.3 Simmer gently for 10 minutes. Add chopped cooked bacon, button, and 1 to 2 cups light cream. Season.
