  3. Ingredients:

    6 pineapple
    4 c. tablespoons 
    (60 g) granulated sugar, a piece of butter the size of a walnut syrup with spices
     quarts (2.5 L) water
    1 1/3 pounds (775 g) of spices
    2 cinnamon sticks
    2 vanilla pods
    4 cloves
    4 c. tablespoons (36 g) of starch potato sorbet cream cheese
    1.87 pounds (2 L) of water
    1 pound (454 g) sugar
    3 1/6 oz (100 ml) lemon juice
    1/3 pound (150 g) glucose
    1 pound (454 g) cream cheese
  4. Method:

    1 With spices syrup: Boil water with sugar. Add spices and leave to infuse. Lighten starch potato with cold water.

    2 Pour in the boiling syrup. Once thickened, remove from heat and set aside. Sorbet Cream Cheese: Prepare a syrup with sugar.

    3 Once cooled, mix the cream cheese, lemon juice and glucose. Strain and place in the ice cream freezer. Set aside.

    4 Preparation pineapple prepare pineapple. Put 4 c. tablespoons (60 g) sugar in a pan. Heat until caramelized. Add the butter and cook the pineapple in caramel.

    5 Roast 6 or 7 minutes, turning regularly. Place the pineapple in a serving dish.

    6 Pour the syrup over spiced. Add a spoonful of sorbet cream cheese and garnished with spices.
