How to Eat Crawfish

While catering crawfish boils in Houston and Dallas we occasionally run into customers that don't actually know how to eat crawfish. I guess I've been there before...although I can't remember when that was. But whenever it was, I'm sure I probably initially felt intimidated. But once I got the hang of it, I easily perfected the science of properly eating boiled spicy crawfish; Louisiana style.


If you find yourself at one of the events we're catering and you're watching everyone else eating our great crawfish don't run and go hide. Instead, here's what you do:

The first thing to do to get that sweet, spicy meat (beignet chocolat recette) is to grab the head with one hand and pull the tail off with the other hand.

If you're an avid crawfish eater you're gonna suck the juices from the head. I can always tell who's from Louisiana because they'll typically bite the head, crushing it with their teeth to fully suck all the juice and flavor from it. If you prefer not to suck the head then keep the tail meat and then...


Slide a finger or thumb under the first few shell segments at the top of the tail that was attached to the head and peel away the top few shell segments to partially expose the tail meat. With the bottom of the shell still partially remaining, bring the tail meat to your mouth and lightly sink your teeth into the exposed meat. Bite down lightly, while sucking, and squeezing the base of the tail and the tail meat will pop into your mouth leaving the tail shell in your fingers.

Ingredients: 
2.5 kg of lobsters
2 kg of fresh tomatos
1 kg of aubergines
3 olive oil dl
1 basil bouquet
150 G of brunoise (onion and shallot) 1 bouquet garni
1 L of fish stock
salt, Cayenne pepper
3 dl Mornay sauce

Method:

Peel lobsters and on standby preserve the tails in carapace on the ice. Nantua sauce: Prepare 1 liter of sauce with fish stock, the trunks and the grips of lobsters, the vegetable brunoise and approximately 1.5 kg of tomatos. Cut aubergines into slices, before the poêler with the olive oil, then pose them on a linen, to reabsorb the oil surplus. Poach the lobster tails during a few minutes. Chop basil. Peel and cut the lobster tails.

The Perfect Fruit

Pear, One of the nature's perfect fruit

Pear is also known as Pomaceous fruit is placed in the genus Prunus. The word pear has been derived from a Greek word. Pear is known in cultivation in the cooler temperate climates since times immemorial.
They are supposed to be natives to the coastal and mild temperate regions of Old World, from Western Europe and North Africa east right across Asia. They are medium-sized trees attaining height of 10-17 m with a narrow crown and some varieties are shrubby also. The leaves are arranged in alternate fashion on the branches and are 2-12 cm long. The leaves are generally glossy green or silvery hairy, oval to lanceolate. Majority of the species are deciduous but two growing in Southeast Asia are evergreen.


Pears, for instance, might be nature's most perfect fruit. Even recommended as one of the first fruits for infants, pears have fewer allergic reactions than just about any other fruit. Ingredients

• 4 beautiful pears
• 300 G of sugar
• 2 cinnamon sticks
• 2 cloves
• 50 Cl of Castle of Hospitalet 95
50 water Cl

Method:

Make a syrup with an equal quantity of water and wine, castle of Hospitalet 95, sugar (to the amount of 30% of the liquid part), of the cinnamon sticks and the cloves. Peel pears, then poach them when the syrup quivers. Completely let cool them in syrup, about during 12 mn. Make a quenelle of ice cream vanilla, slice pears, put cinnamon in decoration, with syrup, and finish in beauty by a blow of pepper mill.

     Sugar - ¾ c
    Vanilla essence - 1 tsp
    Egg - 1
    Mashed bananas - 2, ripe
    Self-rising flour - 1 ½ c
    Milk - ¼ c

    Preparation: In a medium-sized saucepan, melt the sugar, vanilla and butter. Take it off from the heat. Add the mashed bananas. Stir thoroughly till the mix gets blended well. Add the egg and mix it. Stir in milk and flour. Mix it lightly. Bake it for 40 minutes at 170 degrees C and your banana cake is ready to be served.

    Ingredients required are:

    For the cake:

    Butter for greasing
    All-purpose flour - 3 c
    Sugar - 2 c
    Baking soda - 1 tsp
    Ground cinnamon - 1 tsp
    Salt - ½ tsp
    Vegetable oil - ¾ c
    Mashed ripe bananas - 4, large
    Chopped pecans - 1 c
    Vanilla extract - 1 ½ tsp
    For the frosting:
    Cream cheese - 8 oz at room temperature
    Butter - ½ c at room temperature
    Sifted confectioner’s sugar - 1 lb
    Vanilla extract - 1 tsp
    Chopped pecans - ½ c

    Preparation: 

    Preheat the oven to 175 degrees C. Butter 3 round cake pans of 9-inch size and keep them aside. 

    Cake: Stir together sugar, flour, baking soda, salt and cinnamon in a mixing bowl. Add the oil and eggs and stir till the dry ingredients get moistened. You should not beat the mixture. Stir in pecans, banana and vanilla. Among the 3 pans, divide the batter and bake it in a preheated oven for 28 minutes or till a toothpick comes out clean after inserting it into the middle of the cake. For ten minutes, cool the cake layers and then turn them out onto a wire rack. Cool completely. While the cake is getting cooled, make the frosting. 

    For the frosting: Blend together butter and cream cheese in a bowl. Add the confectioner’s sugar gradually and beat till it is fluffy and light. Beat in vanilla. Stir in pecans. When the cake is completely cooled, put one part of the cake in a plate and spread half the filling over the top. Then place the second part on top of the filling and again spoon the remaining filling. Place the last part of the cake on top of the filling. Refrigerate the cake for 8 hours. The delicious banana cake with cream cheese frosting is ready to be served.
