  1. Squash Soup with Goat Cheese and gnoccis

  2. Ingredients:

    For the soup
    1 onion
    1 shallot
    3 cloves of garlic
    1 piece of rind port
    1 bay leaf
    500 g (1.1 lb) pumpkinchicken broth. 
    For fungi
    50 g (1.76 oz) mushrooms
    50 g of mushrooms
    50 g chanterelles
    50 g of trumpets,olive oilbutter
    1 shallot
    1 clove garlic, minced. For gnoccis
    250g ricotta
    1 egg yolk
    1 c. tablespoons flour
    salt
    pepper
    olive oil
    herbs (dried savory, fennel, basil and thyme).
  3. Preparation: 

    1 Preparing soup: Sweat the onion, shallot and garlic in butter. Slice the pork rind, add to the pan with a bay leaf.

    2 Stir in squash. Season and sweat. Deglaze with the chicken broth and simmer 25 minutes.

    3 Preparation of mushrooms: Clean and wash the mushrooms. Fry in olive oil until they made their water completely.

    4 Drain, then fry in butter, shallots and chopped garlic. Gnoccis preparation: Mix ricotta, egg yolk, flour, salt, pepper, olive oil and herbs.

    5 Chill for 15 minutes. Shape into small balls of size 2 c. makers. Poach in boiling water.

    6 Once the gnoccis rise to the surface they are cooked. Place the soup in a blender and strain. Add it for a knob of butter and season to taste.

    7 Arrange the mushrooms around gnoccis on a plate and pour the soup.

  7. Scientists tell us that a recently discovered hormone is one of the main reasons why people feel hungry. It's a hormone called "ghrelin" and was only discovered in 1999. This hormone is released by cells in the walls of our stomach. It then travels through in our blood to the brain, where the part of the brain monitoring hunger detects it. Once detected, it tells our body that we must eat.

You sit down and eat a ham sandwich and have a drink of water. This will keep you from feeling hungry for at least a hour or two. However, if you blend the water with the food - i.e. make soup - you will feel fuller for longer! Why? You've not eaten or drunk any less.

    The reason is that if you drink the water and eat the food separately the stomach allows the water through quickly, but holds the food back so it can digest it. But, if you blend the water with the food, the whole lot is kept back, therefore keeping your stomach walls stretched further for longer, therefore no ghrelin is released and therefore your brain isn't telling you to find food!

    Very simple. Very effective. Eating soup at lunchtimes will help you lose weight because it will hold off those mid afternoon cravings!
