Mushroom Chowder

Chaudrée de champignons

  1. Adapted from Mushroom Cookery by Rosetta Reitz is a consistent version ofmushroom soup.Feel free to add clams, fish and oysters, too.
  2. Ingredients:

    Mushrooms 1 lb
    4 slices of bacon
    1 onion, chopped
    2 cups potatoes, diced
    2 cups water½ teaspoon of salt
    1/8 teaspoon freshly ground pepper
    2 cups milk
    2 tablespoons butter
    1 to 2 cups light cream

    Method: 

    1 Cut the bacon into strips ¼ inch. Cook in a frying pan and drain on absorbent paper. In the same skillet, saute onion until golden. Pour off half the fat.

    2 In the pan, add the potatoes, water, salt and pepper. Cover and boil for 30 minutes. Cut the mushrooms into quarters. Add to potato mixture with the milk.

    3 Simmer gently for 10 minutes. Add chopped cooked bacon, button, and 1 to 2 cups light cream. Season.
